Dinner recipe
Ingredients (2 servings):
- 400g salmon fillets (2 large fillets or 4 smaller ones)
- 2 avocados, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 2 tablespoons fresh coriander, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
Method:
1. Season salmon fillets with salt and pepper and grill until cooked.
2. In a bowl, combine diced avocados, cherry tomatoes, red onion, corinader, olive oil, salt, and pepper.
3. Serve grilled salmon topped with avocado salsa.
