I just thought I would share this recipe for home-made Italian Meatballs, which I made last week when Sue and I went on a walking weekend with a group of our Nutritional Therapy friends. On the Friday evening of these weekends we all take along a dish to share, and this year's theme was mediterranean food so I chose this italian recipe. from Diet Doctor. Although you make the meatballs yourself, this recipe is in fact very simple. You just mix some minced beef (or you could use turkey mince), with an egg, some parmesan cheese, garlic powder, onion powder and some basil (I used fresh, rather than the dried suggested in the recipe) and season with salt and peppar. You then divide the mix into smaller meatballs and fry them in olive oil until browned. You then add some tinned tomatoes and simmer for about 15-20 mins, stirring every few minutes. (I used 2 tins of tomatoes rather than the one in the recipe, as I had a bit more meat and I wanted a little more sauce.) You then cook some spinach in butter in a separate pan, then add this, plus some choppeed parsley to the meatballs and sauce. Finally, tear up some fresh mozzerella and add to the top before serving - it melts in the tomato sauce and becomes nice and gooey!
