I just wondered how many of you have tried eating creamed swede as an alternative to mashed potatoes? Whilst we talk about celeriac quite a lot, I wonder whether swede is not an even tastier alternative. To make creamed swede all I do is to peel and chop some swede into small pieces and cook in water until soft. I then put it into a blender with some butter, cream, salt and plenty of pepper. It really makes a smooth mash and very good with a meat dish. Swede has under 6 grams of carbs per 100g, so whilst not quite as low in carbs as celeriac, its still a pretty good alternative to potatoes! Its also cheap as chips!
