Recipe
Ingredients (1 serving):
- 2 hard-boiled eggs, chopped
- 2 tablespoons mayonnaise
- 1 teaspoon mustard
- 30g celery, finely chopped
- ½ red pepper
- Salt and pepper to taste
- Large lettuce leaves for wrapping
- 30g chunk of hard cheese e.g Cheddar or Emmental
- 30g nuts e.g pecans or walnuts
- Method:
1. Mix chopped eggs, mayonnaise, mustard, red pepper and celery in a bowl.
2. Season with salt and pepper.
3. Spoon into lettuce leaves and wrap.
4. Serve with the cheese and nuts
